Yoga Kitchen & Co.: No-Bake Bomb Bites

Sunday, December 18, 2016 was the second installment of Yoga Kitchen & Co., a unique experience that nourishes the body and build community. After a moving meditation and the Year-End-Reflections workshop we had some tasty nibbles.

I’ve been obsessed with these little no-bake balls but the recipes online are well, let’s be honest, they taste like cardboard. No thank you! Healthy food can taste good as well people, don’t be fooled. So I’ve been tinkering around in the kitchen to create some perfectly healthy, tasty, high protein, low sugar snacks that are super quick and easy to make… and did I mention no oven required. I’ve hit the motherload! For those that may not know, I’m rubbish when it comes to baking. Maybe it’s cause you have to follow directions and I’m too much of a free-spirit for all that.

The beauty about my revamped No-Bake Bomb Bites are you probably have some of these ingredients in your home already. Before we dive into how to make these little buggers, I have to share with you one little tidbit I found really fascinating about vanilla extract. Vanilla extract is not the same as artificial vanilla flavor, which is made with a chemical extracted from coal tar and wood. Vanilla extract is richer tasting and offer health benefits you won't get from the artificial version. Vanilla extract has powerful liver-protective abilities, as well as anti-inflammatory abilities. Also the antioxidants protect your body from damage from harmful components, such as free radicals and toxins. All vanilla extracts are high in alcohol, but the alcohol evaporates when exposed to high heat, such as during baking. Remember this is a no-bake recipe… don’t get lit now.

Okay, let get this ball rolling... see what I did there?

NO-BAKE PB&J BOMB BITES

Ingredients:

  • 1 cup old fashioned oats

  • ½ cup natural peanut butter

  • ½ cup raisins

  • ⅓ cup chia seeds

  • ⅓ cup flax seeds

  • ⅓ cup almonds

  • 1 tablespoon of honey (any natural liquid sweetener such as agave, etc.)

DIRECTIONS:

  1. Stir all ingredients together in a medium bowl until thoroughly mixed.

  2. Cover and let chill in the refrigerator for half an hour.

  3. Once chilled, Use a teaspoon to scoop out each a heaping serving and form into a ball.

  4. Roll the balls in oats to coat.

  5. Store in an airtight container and keep refrigerated for up to 1 week.

  6. Makes about 20-25 balls.


NO-BAKE LEMON DROP BOMB BITES

Ingredients:

  • 1 cup dates

  • 1 cup old fashioned oats

  • ½ cup whole almonds

  • 1½ teaspoon lemon zest

  • 2 tablespoons lemon juice

  • ⅓ cup chia seeds

  • 1 teaspoon vanilla

  • 2 tablespoons shredded coconut


 

DIRECTIONS:

  1. Stir all ingredients together in a medium bowl until thoroughly mixed.

  2. Cover and let chill in the refrigerator for half an hour.

  3. Once chilled, Use a teaspoon to scoop out each a heaping serving and form into a ball.

  4. Ground oats and almonds. Blend with shredded coconut and roll balls in the mix until to coat.

  5. Enjoy the bomb bites!

  6. Store in an airtight container and keep refrigerated for up to 1 week.

  7. Makes about 20-25 balls.


NO-BAKE C2 BOMB BITES

Ingredients:

  • 1 cup old fashioned oats

  • ½ cup dark chocolate minis

  • ½ cup currants

  • ¼ cup flax meal

  • ¼ cup chia seeds

  • ½ teaspoon cinnamon

  • 1 tablespoon of honey (any natural liquid sweetener such as agave, etc.)

  • 1 teaspoon vanilla extract


 

DIRECTIONS:

  1. Stir all ingredients together in a medium bowl until thoroughly mixed.

  2. Cover and let chill in the refrigerator for half an hour.

  3. Once chilled, Use a teaspoon to scoop out each a heaping serving and form into a ball.

  4. Roll the balls in oats to coat.

  5. Enjoy the bomb bites!

  6. Store in an airtight container and keep refrigerated for up to 1 week.
